Description

These Salted Caramel Cookies are irresistibly chewy, combining soft caramel with a hint of sea salt for a perfect balance of sweet and salty.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup caramel bits or soft caramel, cut into pieces
  • Sea salt for sprinkling

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together the flour, baking soda, and salt until well combined.
  3. Cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy — about 2 to 3 minutes.
  4. Beat in the eggs one at a time, ensuring each one is fully incorporated before adding the next.
  5. Add in the flour mixture gradually, mixing until just combined. Don’t overmix!
  6. Stir in the caramel bits evenly throughout the dough.
  7. Scoop tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Sprinkle a pinch of sea salt on top of each cookie.
  9. Bake for 10-12 minutes, until the edges are golden and centers are set.
  10. Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Dough can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. Best enjoyed fresh!
