Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/3 cup honey
  • 1/3 cup soy sauce (low sodium preferred)
  • 1/4 cup ketchup
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger (optional)
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1 tablespoon cornstarch (optional)
  • 2 tablespoons water (optional)
  • Sesame seeds (for garnish)
  • Chopped green onions (for garnish)

Instructions

  1. Start by gently seasoning the chicken thighs or breasts with salt and black pepper on both sides.
  2. In a small bowl, whisk together the honey, soy sauce, ketchup, minced garlic, ginger (if using), rice vinegar, and red pepper flakes.
  3. Place the chicken pieces snugly in the slow cooker and pour the sauce over the chicken.
  4. Cover the slow cooker and set it to cook on low for 240-300 minutes or high for 120-180 minutes.
  5. If desired, remove the chicken and thicken the sauce by mixing cornstarch with water and simmering until thickened.
  6. Return the chicken to the slow cooker or pour the thickened sauce over it. Finish with sesame seeds and chopped green onions.
