- 1 cup long-grain white rice
- 1 cup chicken broth
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 lemon, juiced and zested
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup frozen peas (optional)
Instructions
- In a slow cooker, combine chicken breasts, rice, onion, garlic, lemon juice, broth, and herbs. Season generously with salt and pepper to taste.
- Drizzle olive oil over the top, allowing it to enhance the flavors beautifully.
- Cover the slow cooker lid and cook on low for 360 minutes or high for 240 minutes. The result will be succulent, tender chicken and perfectly cooked rice.
- If you’re adding peas, stir them in during the last 30 minutes of cooking to keep them vibrant and crisp.
- Once everything is cooked and the kitchen smells heavenly, fluff the rice with a fork and serve hot, garnished with a sprig of rosemary for that extra touch.
