Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 cup chicken broth
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup frozen peas (optional)

Instructions

  1. In a slow cooker, combine chicken breasts, rice, onion, garlic, lemon juice, broth, and herbs. Season generously with salt and pepper to taste.
  2. Drizzle olive oil over the top, allowing it to enhance the flavors beautifully.
  3. Cover the slow cooker lid and cook on low for 360 minutes or high for 240 minutes. The result will be succulent, tender chicken and perfectly cooked rice.
  4. If you’re adding peas, stir them in during the last 30 minutes of cooking to keep them vibrant and crisp.
  5. Once everything is cooked and the kitchen smells heavenly, fluff the rice with a fork and serve hot, garnished with a sprig of rosemary for that extra touch.
