- 4 chicken breasts
- 2 cups fresh spinach
- 1 cup mushrooms, sliced
- 4 strips turkey bacon, chopped
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- In a large skillet, cook the turkey bacon over medium heat until crispy. Remove from the skillet and set aside.
- In the same skillet, drizzle olive oil and add the chopped onions and minced garlic. Sauté until the onions are translucent, about 3-4 minutes.
- Push the onions to the side and add the chicken breasts, seasoning with salt and pepper. Cook until browned on both sides, about 5-7 minutes per side.
- Add the sliced mushrooms and spinach to the skillet. Stir and cook until the spinach wilts, about 2-3 minutes.
- Pour in the heavy cream and let simmer, stirring until thickened.
- Stir in the crispy turkey bacon and let simmer for an additional 5-10 minutes until chicken is cooked through and sauce is thick.
- Serve hot over pasta, rice, or mashed potatoes.
Notes
Make ahead by preparing up to the simmering step and storing in the fridge. Use pre-cooked chicken for quicker prep.
