Description

A comforting dish featuring chicken smothered in a creamy sauce with spinach, bacon, and mushrooms, perfect for cozy dinners.


Ingredients

Scale
  • 4 chicken breasts
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 4 strips turkey bacon, chopped
  • 1 cup heavy cream
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy. Remove from the skillet and set aside.
  2. In the same skillet, drizzle olive oil and add the chopped onions and minced garlic. Sauté until the onions are translucent, about 3-4 minutes.
  3. Push the onions to the side and add the chicken breasts, seasoning with salt and pepper. Cook until browned on both sides, about 5-7 minutes per side.
  4. Add the sliced mushrooms and spinach to the skillet. Stir and cook until the spinach wilts, about 2-3 minutes.
  5. Pour in the heavy cream and let simmer, stirring until thickened.
  6. Stir in the crispy turkey bacon and let simmer for an additional 5-10 minutes until chicken is cooked through and sauce is thick.
  7. Serve hot over pasta, rice, or mashed potatoes.

Notes

Make ahead by preparing up to the simmering step and storing in the fridge. Use pre-cooked chicken for quicker prep.
