Ingredients

- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup brown sugar, packed
- 1/2 cup molasses
- 1 large egg
- Royal icing for frosting
Instructions
- Whisk together flour, baking soda, ginger, cinnamon, cloves, and salt in a bowl.
- Cream the butter and brown sugar in another bowl until fluffy.
- Beat in the molasses and egg until well blended.
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Divide the dough, wrap in plastic, and chill for at least 60 minutes.
- Preheat the oven to 350°F (175°C).
- Roll out the chilled dough to 1/4 inch thickness and cut out gingerbread men shapes.
- Place on baking sheets and bake for 8-10 minutes.
- Allow to cool before frosting with royal icing.
Notes
You can prepare the dough in advance and store it in the fridge for up to two days. Store cookies in an airtight container to keep them soft.
