- 1/2 cup Peanut Butter
- 1/2 cup Butter (softened)
- 1/3 cup Brown Sugar
- 1/3 cup White Sugar
- 1 1/4 cups All-purpose Flour
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 tsp Vanilla Extract
- 1 Egg
Instructions
- Cream together the brown sugar, white sugar, peanut butter, and softened butter in the bowl of a stand mixer until smooth and creamy.
- Beat in the egg and vanilla extract until well combined.
- Combine the flour, baking soda, and salt in another bowl and stir until well mixed.
- Gradually add the dry ingredients to the wet mixture and mix until everything is well incorporated into a soft dough.
- Transfer the dough to a bowl, cover it with plastic wrap, and chill for one hour.
- Preheat your oven to 375°F.
- Line a baking sheet with parchment paper or a silicone baking mat.
- Roll about 1-1/2 tablespoons of dough into a ball and transfer to the baking sheet, pressing down with a fork for a crisscross pattern.
- Bake for 9–11 minutes, or until the edges are golden brown.
- Cool on a wire rack before enjoying!

For variations, consider adding chocolate chips, chopped nuts, or a dollop of jam before baking.
