Description

Soft and chewy peanut butter cookies that invoke nostalgia and warmth, perfect for any occasion.


Ingredients

  • 1/2 cup Peanut Butter
  • 1/2 cup Butter (softened)
  • 1/3 cup Brown Sugar
  • 1/3 cup White Sugar
  • 1 1/4 cups All-purpose Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 tsp Vanilla Extract
  • 1 Egg

Instructions

  1. Cream together the brown sugar, white sugar, peanut butter, and softened butter in the bowl of a stand mixer until smooth and creamy.
  2. Beat in the egg and vanilla extract until well combined.
  3. Combine the flour, baking soda, and salt in another bowl and stir until well mixed.
  4. Gradually add the dry ingredients to the wet mixture and mix until everything is well incorporated into a soft dough.
  5. Transfer the dough to a bowl, cover it with plastic wrap, and chill for one hour.
  6. Preheat your oven to 375°F.
  7. Line a baking sheet with parchment paper or a silicone baking mat.
  8. Roll about 1-1/2 tablespoons of dough into a ball and transfer to the baking sheet, pressing down with a fork for a crisscross pattern.
  9. Bake for 9–11 minutes, or until the edges are golden brown.
  10. Cool on a wire rack before enjoying!

Notes

For variations, consider adding chocolate chips, chopped nuts, or a dollop of jam before baking.
