- 2 medium sweet potatoes
- 4 large eggs
- 1 cup fresh spinach, chopped
- 1/2 cup goat cheese, crumbled
- 1/2 cup milk (or your preferred milk alternative)
- Salt and pepper, to taste
- Optional: your favorite vegetables (e.g., bell peppers, onions, mushrooms)
Instructions
- Preheat your oven to 375°F (190°C).
- Peel and grate the sweet potatoes, then press them into the bottom and up the sides of a greased pie dish to form a crust.
- Bake the sweet potato crust for about 15 minutes until slightly softened.
- In a bowl, whisk together the eggs, milk, salt, and pepper.
- Stir in the chopped spinach and crumbled goat cheese, as well as any additional vegetables you prefer.
- Pour the egg mixture into the pre-baked sweet potato crust.
- Bake for an additional 25–30 minutes or until the eggs are set and the top is slightly golden.
- Allow to cool for a few minutes before slicing and serving. Enjoy!
Notes
This quiche is delightful cold, but can also be reheated gently in the oven or microwave. Make the crust in advance for quicker preparation.
