Delightful Strawberry Crumb Bars with a buttery topping and sweet strawberry filling, perfect for summer snacking.
Ingredients

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup brown sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch pan.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add in the flour and salt, mixing until crumbly.
- Press half of the crumbly mixture into the bottom of the prepared pan.
- Combine the sliced strawberries, brown sugar, cornstarch, lemon juice, and cinnamon in another bowl.
- Pour the strawberry mixture over the crust, spreading it evenly.
- Crumble the remaining dough over the strawberry filling.
- Bake in the preheated oven for 45-50 minutes, or until golden brown.
- Allow to cool before cutting into bars.
Notes
Store any leftovers in an airtight container in the refrigerator for up to 5 days. You can freeze these bars for up to three months!
