A refreshing street corn and cucumber salad, perfect for summer gatherings.
Ingredients

- 2 ears of corn
- 1 large cucumber
- 1/4 cup red onion, diced
- 1/4 cup fresh cilantro, chopped
- 1/2 cup Greek yogurt
- 1 tablespoon mayonnaise
- 1 clove garlic, minced
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Grill the corn over medium-high heat for about 10-12 minutes until it’s slightly charred.
- Allow the corn to cool, then carefully remove the kernels and place them in a mixing bowl.
- Add the diced cucumber, chopped red onion, and cilantro to the bowl.
- Whisk together the Greek yogurt, mayonnaise, minced garlic, lime juice, chili powder, salt, and pepper in another bowl.
- Pour the dressing over the corn mixture and toss gently until evenly coated.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
This salad tastes even better the next day as the flavors continue to develop.
