Description

A refreshing street corn and cucumber salad, perfect for summer gatherings.


Ingredients

  • 2 ears of corn
  • 1 large cucumber
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 clove garlic, minced
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Grill the corn over medium-high heat for about 10-12 minutes until it’s slightly charred.
  2. Allow the corn to cool, then carefully remove the kernels and place them in a mixing bowl.
  3. Add the diced cucumber, chopped red onion, and cilantro to the bowl.
  4. Whisk together the Greek yogurt, mayonnaise, minced garlic, lime juice, chili powder, salt, and pepper in another bowl.
  5. Pour the dressing over the corn mixture and toss gently until evenly coated.
  6. Chill in the refrigerator for at least 30 minutes before serving.

Notes

This salad tastes even better the next day as the flavors continue to develop.
