A cozy meatloaf made with savory beef, rich Swiss cheese, crispy turkey bacon, and earthy mushrooms, perfect for family dinners.

- 2 lbs ground beef (80/20 preferred for juiciness)
- 1 cup shredded Swiss cheese
- 1 cup cooked turkey bacon, chopped
- 1 cup mushrooms, sliced and sautéed
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup breadcrumbs
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
- Fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with foil or use a loaf pan.
- Cook the turkey bacon in a skillet over medium heat until crispy, then remove and set aside.
- Sauté the sliced mushrooms in the bacon fat until golden brown.
- In a large bowl, combine the ground beef, eggs, breadcrumbs, onion, garlic, Worcestershire sauce, salt, and pepper. Mix gently.
- Fold in half of the shredded Swiss cheese into the meat mixture.
- Shape the meat mixture into a loaf and place on the prepared baking sheet.
- Press the remaining Swiss cheese, sautéed mushrooms, and bacon on top of the loaf.
- Bake for 45–55 minutes or until the internal temperature reaches 160°F (71°C).
- Allow to rest for 10 minutes before slicing and garnish with parsley.
Notes
Make-ahead advice: Shape the meatloaf the day before and refrigerate overnight. Leftovers can be stored in an airtight container for up to 3 days, or freeze for up to 3 months.
