Description

A cozy meatloaf made with savory beef, rich Swiss cheese, crispy turkey bacon, and earthy mushrooms, perfect for family dinners.


Ingredients

  • 2 lbs ground beef (80/20 preferred for juiciness)
  • 1 cup shredded Swiss cheese
  • 1 cup cooked turkey bacon, chopped
  • 1 cup mushrooms, sliced and sautéed
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup breadcrumbs
  • 2 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with foil or use a loaf pan.
  2. Cook the turkey bacon in a skillet over medium heat until crispy, then remove and set aside.
  3. Sauté the sliced mushrooms in the bacon fat until golden brown.
  4. In a large bowl, combine the ground beef, eggs, breadcrumbs, onion, garlic, Worcestershire sauce, salt, and pepper. Mix gently.
  5. Fold in half of the shredded Swiss cheese into the meat mixture.
  6. Shape the meat mixture into a loaf and place on the prepared baking sheet.
  7. Press the remaining Swiss cheese, sautéed mushrooms, and bacon on top of the loaf.
  8. Bake for 45–55 minutes or until the internal temperature reaches 160°F (71°C).
  9. Allow to rest for 10 minutes before slicing and garnish with parsley.

Notes

Make-ahead advice: Shape the meatloaf the day before and refrigerate overnight. Leftovers can be stored in an airtight container for up to 3 days, or freeze for up to 3 months.
