  • 4 tablespoons olive oil (Adds richness)
  • To taste: salt (Enhances overall flavor)
  • To taste: pepper (Use freshly cracked black pepper)
  • 1 teaspoon honey or maple syrup (Optional for sweetness)

Instructions

  1. Prepare the Beets: Roast or steam beets until tender, then peel and cut into bite-sized cubes.
  2. Slice the Cucumber: Wash and slice the seedless cucumber into thin slices or cubes.
  3. Crumble the Feta: Crumble fresh feta cheese into chunks.
  4. Mix the Dressing: Whisk together red wine vinegar, olive oil, honey (if using), and a pinch of salt and pepper.
  5. Combine Ingredients: In a mixing bowl, add roasted beets, sliced cucumber, and crumbled feta. Drizzle with dressing and toss gently.
