Instructions
- Preheat the oven to 375°F (190°C).
- Mix diced apples, sugar, cinnamon, and lemon juice in a bowl.
- Roll out the pie crusts and cut them into small squares.
- Place a spoonful of the apple mixture in the center of each square.
- Fold the corners of the square over the filling and pinch to seal.
- Place the bites on a baking sheet lined with parchment paper.
- Brush the tops with beaten egg.
- Bake for 15-20 minutes or until golden brown.
- Serve warm with vanilla ice cream if desired.
