These crispy bacon jalapeño popper eggrolls are filled with creamy cheese and spicy jalapeños, perfect for cozy gatherings.

- 8 slices turkey bacon, cooked and crumbled
- 2–3 jalapeños, finely chopped
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 package eggroll wrappers
- Oil for frying
- Salt and pepper to taste
Instructions
- Mix together the crumbled turkey bacon, jalapeños, cream cheese, cheddar cheese, salt, and pepper until well combined.
- Lay an eggroll wrapper on a clean surface with a corner facing you and place 2 tablespoons of the filling in the center.
- Fold the bottom corner over the filling, tuck it in gently, then fold in the sides and roll tightly to form an eggroll.
- Heat oil in a deep pan over medium heat and fry the eggrolls in batches for about 3-4 minutes per side until golden brown and crispy.
- Drain the eggrolls on paper towels to soak up any excess oil, then serve warm.
Notes
You can prepare eggrolls ahead of time and freeze them un-fried. Fry them straight from the freezer when ready to enjoy.
