Description

These crispy bacon jalapeño popper eggrolls are filled with creamy cheese and spicy jalapeños, perfect for cozy gatherings.


Ingredients

  • 8 slices turkey bacon, cooked and crumbled
  • 23 jalapeños, finely chopped
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 package eggroll wrappers
  • Oil for frying
  • Salt and pepper to taste

Instructions

  1. Mix together the crumbled turkey bacon, jalapeños, cream cheese, cheddar cheese, salt, and pepper until well combined.
  2. Lay an eggroll wrapper on a clean surface with a corner facing you and place 2 tablespoons of the filling in the center.
  3. Fold the bottom corner over the filling, tuck it in gently, then fold in the sides and roll tightly to form an eggroll.
  4. Heat oil in a deep pan over medium heat and fry the eggrolls in batches for about 3-4 minutes per side until golden brown and crispy.
  5. Drain the eggrolls on paper towels to soak up any excess oil, then serve warm.

Notes

You can prepare eggrolls ahead of time and freeze them un-fried. Fry them straight from the freezer when ready to enjoy.
