Description

Cozy and comforting Banana Bread Scones infused with sweet banana and a hint of cinnamon, perfect for any occasion.


Ingredients

  • 2 ripe bananas
  • 2 cups all-purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 1/2 cup buttermilk
  • 1/2 teaspoon vanilla extract
  • 1/4 cup brown sugar (for glaze)
  • 1 tablespoon cinnamon (for topping)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mash the bananas in a large bowl until smooth and creamy.
  3. Add the flour, sugar, baking powder, baking soda, and salt, then mix to combine.
  4. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  5. Stir in the buttermilk and vanilla extract until just combined—don’t overmix!
  6. Turn the dough out onto a floured surface and knead gently a few times. Form it into a circle about 1 inch thick and cut into wedges.
  7. Place the scones on the prepared baking sheet and sprinkle generously with cinnamon sugar.
  8. Bake for 15-20 minutes until golden brown and delightful.
  9. Mix brown sugar with a little bit of water until smooth for the glaze, and drizzle over the warm baked scones.

Notes

These scones can be prepared ahead of time and stored in the refrigerator for up to two days. Use very cold butter for the best flaky texture.
