Description

Enjoy crispy, golden breakfast potatoes that are quick to make and customizable with various toppings.

Ingredients

Scale
  • 2 pounds baby potatoes (red or yellow)
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prep the potatoes: Start by washing the baby potatoes thoroughly. Cut them in half (or quarters if they’re larger) to ensure they cook evenly.
  2. Season the potatoes: Place the cut potatoes in a large bowl. Drizzle with olive oil, then sprinkle garlic powder, onion powder, smoked paprika, salt, and pepper over them. Toss until all the potatoes are evenly coated.
  3. Sauté the potatoes: Heat a large skillet over medium-high heat. Once hot, add the seasoned potatoes to the skillet, making sure they are spread out in a single layer. Let them cook for about 10-15 minutes, turning occasionally, until they’re golden and crispy.
  4. Check for doneness: Use a fork to pierce the potatoes—if they’re tender and the outside is crispy, they’re ready to serve.
  5. Garnish and serve: Once cooked, remove the potatoes from the skillet and transfer them to a serving dish. Garnish with fresh parsley if desired. Serve hot and enjoy!
