- 2 cups cooked chicken, shredded or chopped
- ½ cup BBQ sauce

- 1 cup corn (fresh or frozen)
- 1 cup cheddar cheese, shredded
- 2 tablespoons olive oil
- Salt, to taste
- Black pepper, to taste
- 1 teaspoon smoked paprika
- 2 green onions, sliced, for topping
Instructions
- Start by cooking the sweet potatoes in a large skillet over medium heat. Drizzle them with olive oil and season with salt, black pepper, and smoked paprika. Sauté for about 10-12 minutes until they are golden and tender, stirring occasionally.
- Once the sweet potatoes are soft, add the sliced red onion and corn to the skillet. Continue to cook for another 5 minutes until the onions become translucent and fragrant.
- Next, stir in the cooked chicken and BBQ sauce until everything is nicely coated and heated through.
- Top the mixture with the shredded cheddar cheese, covering it generously. Cover the skillet with a lid and let it cook on low until the cheese is melted and bubbly.
- Finally, remove the skillet from the heat, sprinkle with sliced green onions for that fresh crunch, and serve warm.
