Ingredients

  • 1 medium red onion, sliced
  • 1 cup corn (fresh or frozen)
  • 1 cup cheddar cheese, shredded
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon smoked paprika
  • 2 green onions, sliced, for topping

Instructions

  1. Start by cooking the sweet potatoes in a large skillet over medium heat. Drizzle them with olive oil and season with salt, black pepper, and smoked paprika. Sauté for about 10-12 minutes until they are golden and tender, stirring occasionally.
  2. Once the sweet potatoes are soft, add the sliced red onion and corn to the skillet. Continue to cook for another 5 minutes until the onions become translucent and fragrant.
  3. Next, stir in the cooked chicken and BBQ sauce until everything is nicely coated and heated through.
  4. Top the mixture with the shredded cheddar cheese, covering it generously. Cover the skillet with a lid and let it cook on low until the cheese is melted and bubbly.
  5. Finally, remove the skillet from the heat, sprinkle with sliced green onions for that fresh crunch, and serve warm.
