Description

A warm and hearty beef enchilada casserole filled with savory flavors, perfect for chilly nights and family gatherings.


Ingredients

  • 1 lb ground beef
  • 1 can (10 oz) red enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Olive oil
  • Salt and pepper to taste
  • Optional toppings: sour cream, chopped cilantro

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Add a drizzle of olive oil to a skillet over medium heat and sauté the chopped onion until translucent, stirring gently until fragrant.
  3. Mix in the minced garlic and ground beef into the skillet. Cook until the beef is browned, breaking it apart with a spoon. Season generously with salt and pepper.
  4. Stir in the black beans, corn, and half of the enchilada sauce until everything is evenly combined and warmed through.
  5. Spread a layer of the remaining enchilada sauce on the bottom of a baking dish.
  6. Layer 3 corn tortillas over the sauce, followed by half of the beef mixture. Sprinkle cheese over this layer.
  7. Repeat the layering process with another set of tortillas, the remaining beef mixture, and more cheese.
  8. Top with the final 2 tortillas, cover with the last bit of enchilada sauce, and sprinkle generously with cheese.
  9. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes.
  10. Let the casserole cool for a few minutes before serving. Add optional toppings like sour cream and chopped cilantro.
