Description

A vibrant pasta salad with rotini, juicy cherry tomatoes, and creamy feta cheese, all dressed in tangy Italian-style dressing.


Ingredients

  • 8 ounces pasta (e.g., rotini or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumbers, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup olives, sliced (black or green)
  • 1 cup feta cheese, crumbled
  • 1/2 cup Italian-style dressing
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Once cooked, drain and rinse under cold water to cool.
  2. Combine the cooked pasta, cherry tomatoes, cucumbers, red bell pepper, olives, and feta cheese in a large bowl.
  3. Pour the Italian dressing over the salad and toss gently to combine. Season with salt and pepper to taste.
  4. Chill in the refrigerator for at least 30 minutes before serving.
