Description

Ingredients

  • 1 pound ground beef (80/20)
  • 8 small flour tortillas
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 8 slices American cheese
  • ¾ cup shredded iceberg lettuce
  • ½ cup dill pickle chips
  • ¼ cup finely chopped white onion
  • 1 tablespoon neutral oil
  • ¾ cup mayonnaise
  • 3 tablespoons ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon white vinegar
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder

Instructions

  1. Whisk together the mayonnaise, ketchup, mustard, pickle relish, vinegar, paprika, garlic powder, and onion powder until creamy. Refrigerate until ready to use.
  2. Divide the ground beef into 8 equal portions. Press a thin layer of beef onto one side of each tortilla and season with salt and pepper.
  3. Heat the neutral oil in a large skillet over medium-high heat. Once hot, place the tortillas beef-side down in the skillet. Cook for 3–4 minutes until the beef is beautifully browned.
  4. Flip the tacos and add a slice of American cheese to each. Cook for an additional 1–2 minutes until the cheese melts.
  5. Remove from the skillet, then layer with shredded lettuce, dill pickle chips, and chopped onions. Drizzle with the special sauce you prepared earlier.
  6. Fold the tacos in half and serve immediately while hot and crispy.

Notes

Prepare the special sauce a day in advance for better flavor. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
