- 1 pound ground beef (80/20)
- 8 small flour tortillas
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- 8 slices American cheese
- ¾ cup shredded iceberg lettuce
- ½ cup dill pickle chips
- ¼ cup finely chopped white onion
- 1 tablespoon neutral oil
- ¾ cup mayonnaise
- 3 tablespoons ketchup
- 2 tablespoons yellow mustard
- 2 tablespoons sweet pickle relish
- 1 teaspoon white vinegar
- ½ teaspoon paprika
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
Instructions
- Whisk together the mayonnaise, ketchup, mustard, pickle relish, vinegar, paprika, garlic powder, and onion powder until creamy. Refrigerate until ready to use.
- Divide the ground beef into 8 equal portions. Press a thin layer of beef onto one side of each tortilla and season with salt and pepper.
- Heat the neutral oil in a large skillet over medium-high heat. Once hot, place the tortillas beef-side down in the skillet. Cook for 3–4 minutes until the beef is beautifully browned.
- Flip the tacos and add a slice of American cheese to each. Cook for an additional 1–2 minutes until the cheese melts.
- Remove from the skillet, then layer with shredded lettuce, dill pickle chips, and chopped onions. Drizzle with the special sauce you prepared earlier.
- Fold the tacos in half and serve immediately while hot and crispy.
Notes
Prepare the special sauce a day in advance for better flavor. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
