Description
A delightful blend of creamy cheesecake and vibrant blueberry sauce, perfect for any gathering or cozy night in.
Ingredients
Scale
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
- 1 (8 oz) package cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh blueberries
- 1/4 cup water
- 1/4 cup granulated sugar (for blueberry sauce)
Instructions
- Preheat the oven to 325°F (163°C). Grease a 9×9 inch baking pan.
- Mix graham cracker crumbs, melted butter, and 1/4 cup sugar until fully combined. Press the mixture firmly into the bottom of the prepared pan to create a sturdy crust.
- Beat the softened cream cheese, 1/2 cup sugar, and vanilla extract until smooth and creamy. Add eggs one at a time, mixing well after each addition until the mixture is fully blended.
- Pour the cream cheese mixture over the crust, spreading it evenly for a perfect base.
- Combine the fresh blueberries, 1/4 cup sugar, and water in a saucepan and cook over medium heat, watching closely as the blueberries burst.
- Drop dollops of the blueberry sauce over the cheesecake mixture, then swirl gently with a knife to create a marbled effect.
- Bake for 30-35 minutes, until the center is set but still slightly jiggly.
- Cool and refrigerate for at least 4 hours (or overnight) before cutting into bars.
