Ingredients

  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh blueberries
  • 1/4 cup water
  • 1/4 cup granulated sugar (for blueberry sauce)

Instructions

  1. Preheat the oven to 325°F (163°C). Grease a 9×9 inch baking pan.
  2. Mix graham cracker crumbs, melted butter, and 1/4 cup sugar until fully combined. Press the mixture firmly into the bottom of the prepared pan to create a sturdy crust.
  3. Beat the softened cream cheese, 1/2 cup sugar, and vanilla extract until smooth and creamy. Add eggs one at a time, mixing well after each addition until the mixture is fully blended.
  4. Pour the cream cheese mixture over the crust, spreading it evenly for a perfect base.
  5. Combine the fresh blueberries, 1/4 cup sugar, and water in a saucepan and cook over medium heat, watching closely as the blueberries burst.
  6. Drop dollops of the blueberry sauce over the cheesecake mixture, then swirl gently with a knife to create a marbled effect.
  7. Bake for 30-35 minutes, until the center is set but still slightly jiggly.
  8. Cool and refrigerate for at least 4 hours (or overnight) before cutting into bars.
