Description

A heartwarming side dish made with rice and sweet corn, perfect for autumn gatherings.


Ingredients

Scale
  • 1 cup long-grain rice
  • 2 cups water
  • 1 cup corn (fresh, canned, or frozen)
  • 2 tablespoons butter
  • Salt to taste
  • Pepper to taste
  • Chopped parsley for garnish (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Combine the rinsed rice and water in a medium pot. Bring to a boil over high heat.
  3. Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until all the water is absorbed.
  4. Add the corn on top of the rice in the last 5 minutes of cooking (do not stir) and cover again to allow the corn to steam.
  5. Remove from heat and let it sit covered for 5 minutes.
  6. Fluff the rice with a fork, then stir in the butter, salt, and pepper until creamy and well combined.
  7. Garnish with chopped parsley if desired and serve warm.

Notes

Rinsing the rice is key to keeping it fluffy. Leftovers can be stored for up to 3 days in the fridge.
