A heartwarming side dish made with rice and sweet corn, perfect for autumn gatherings.
Ingredients

- 1 cup long-grain rice
- 2 cups water
- 1 cup corn (fresh, canned, or frozen)
- 2 tablespoons butter
- Salt to taste
- Pepper to taste
- Chopped parsley for garnish (optional)
Instructions
- Rinse the rice under cold water until the water runs clear.
- Combine the rinsed rice and water in a medium pot. Bring to a boil over high heat.
- Reduce the heat to low, cover, and simmer for about 15-20 minutes, or until all the water is absorbed.
- Add the corn on top of the rice in the last 5 minutes of cooking (do not stir) and cover again to allow the corn to steam.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork, then stir in the butter, salt, and pepper until creamy and well combined.
- Garnish with chopped parsley if desired and serve warm.
Notes
Rinsing the rice is key to keeping it fluffy. Leftovers can be stored for up to 3 days in the fridge.
