Description

A warm and comforting Cajun Chicken Orzo dish that’s quick, easy, and perfect for weeknight dinners.

Ingredients

Scale
  • 1 pound chicken breast, diced
  • 1 cup orzo pasta
  • 1 tablespoon Cajun seasoning
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat some oil in a large skillet over medium-high heat. Add the diced chicken and season with Cajun seasoning. Cook until browned, and savor the aroma.
  2. Add the chopped bell pepper, onion, and minced garlic to the skillet. Sauté until the vegetables are tender.
  3. Stir in the orzo and chicken broth. Bring to a boil, then reduce heat and simmer until the orzo is cooked, about 10 minutes.
  4. Incorporate the heavy cream and cook until creamy, enveloping everything in a comforting embrace.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh parsley before serving.

Notes

Make ahead by cooking chicken and veggies a day prior. Store leftovers in an airtight container in the refrigerator for up to 3 days.
