Description

A warm and cozy casserole made with layers of tender potatoes, savory ground beef, and gooey cheese, perfect for family gatherings and weeknight dinners.


Ingredients

  • 1 ½ lbs ground beef (or ground turkey)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 5–6 medium russet potatoes (thinly sliced, about 1/8 inch)
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup shredded mozzarella (optional)
  • 1 10.5 oz can cream of mushroom soup (or cream of chicken)
  • 1 cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 1 tbsp olive oil or butter (for greasing the dish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil or butter.
  2. Cook the ground beef in a large skillet over medium-high heat along with the chopped onion until fully cooked. Drain excess fat, then stir in minced garlic, salt, pepper, and paprika.
  3. Make the sauce by whisking together the cream of mushroom soup and milk until smooth.
  4. Assemble the casserole by layering half of the sliced potatoes, half of the beef mixture, half of the sauce, and 1 cup of cheddar cheese. Repeat layers and finish with remaining cheese.
  5. Bake covered with foil for 45 minutes to cook the potatoes. Then, remove foil and bake for another 15–20 minutes until the cheese is bubbly and golden.
  6. Serve after letting it rest for 5 minutes. Enjoy!

Notes

This casserole can be made ahead and stored in the refrigerator a day in advance. Leftovers keep well in an airtight container for up to 3 days.
