Description

Deliciously crispy roll-ups filled with pepperoni and gooey mozzarella, perfect for an easy weeknight dinner or snack.


Ingredients

  • Low carb tortillas
  • Pepperoni slices
  • Shredded mozzarella cheese
  • Olive oil
  • Italian seasoning
  • Garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lay out the low carb tortillas on a baking sheet.
  3. Place pepperoni slices evenly on each tortilla.
  4. Sprinkle shredded mozzarella cheese generously over the pepperoni.
  5. Drizzle a little olive oil and sprinkle Italian seasoning and garlic powder to taste.
  6. Roll the tortillas tightly and place them seam-side down on the baking sheet.
  7. Bake for 10–12 minutes or until the cheese is melted and the tortillas are crispy.
  8. Slice into pinwheels and serve warm.

Notes

For a spicy kick, consider adding crushed red pepper or jalapeño slices. Leftovers can be stored in the fridge for up to three days.
