Description

Delightful Cheesy Rice Balls, or Arancini, are crispy on the outside and filled with gooey cheese, making them a comforting treat perfect for gatherings or cozy nights in.

Ingredients

Scale
  • 2 cups cooked rice
  • 1 cup mozzarella cheese, diced
  • 1/2 cup cooked ham, diced
  • 1/2 cup sweet peas
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Mix the cooked rice, diced mozzarella cheese, diced ham, sweet peas, salt, and pepper until well combined.
  2. Shape the mixture into small balls, about the size of a golf ball.
  3. Roll each ball in flour, then dip in the beaten eggs, and finally coat with breadcrumbs.
  4. Heat oil in a deep frying pan over medium heat.
  5. Fry the rice balls in batches until they are golden brown and crispy, approximately 3-4 minutes per side.
  6. Remove from oil and let drain on paper towels.
  7. Serve hot and enjoy with marinara sauce or a herby dip.

Notes

Make-ahead advice: Prepare the rice mixture a day in advance and refrigerate it. Reheat in the oven for the best crispiness.
