Description

A comforting and delicious Chicken Pesto Sandwich with sautéed chicken, creamy mozzarella, and zesty pesto, perfect for busy weeknights.


Ingredients

  • 2 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/2 cup pesto
  • 4 slices fresh mozzarella cheese
  • 4 slices of your favorite bread
  • Fresh basil leaves (optional)
  • Tomato slices (optional)

Instructions

  1. Season the chicken breasts with salt and pepper, making sure they are well coated.
  2. Heat olive oil in a skillet over medium heat until it’s shimmering and ready.
  3. Add the chicken breasts to the skillet, cooking for 5-7 minutes on each side until they are golden brown and fully cooked.
  4. Once the chicken is fully cooked, remove it from the skillet and spread pesto generously on top, letting it seep into the tender meat.
  5. Place mozzarella slices on the chicken, covering the skillet for a minute or two until the cheese melts into gooey perfection.
  6. In the same skillet, toast your favorite bread until it’s golden and crisp, soaking up the delicious flavors left behind.
  7. Assemble your sandwich! Place the chicken on a slice of toasted bread, adding fresh basil and juicy tomato slices if desired, then top it off with another slice of bread.
  8. Serve warm and enjoy every delicious bite.

Notes
