Ingredients

- 8 oz spaghetti or linguine
- 2 tablespoons olive oil
- 1 lb chicken breast, diced
- 4 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1/4 cup unsalted butter
- 1/4 cup parsley, chopped
- Salt and pepper to taste
- Parmesan cheese, for serving
Instructions
- Cook spaghetti or linguine according to package instructions; drain and set aside.
- In a large skillet over medium heat, heat olive oil. Add diced chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- In the same skillet, add minced garlic and cook until fragrant.
- Pour in chicken broth and lemon juice, then add butter and stir until melted.
- Return the chicken to the skillet and add cooked pasta, tossing to combine.
- Season with salt and pepper, and stir in chopped parsley.
- Serve hot, garnished with Parmesan cheese.
Notes
Can prepare chicken and sauce in advance; toss with freshly cooked pasta before serving.
