Description

A creamy and vibrant pasta dish that’s perfect for busy weeknights or family gatherings.


Ingredients

Scale
  • 8 oz spaghetti or linguine
  • 2 tablespoons olive oil
  • 1 lb chicken breast, diced
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1/4 cup unsalted butter
  • 1/4 cup parsley, chopped
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions

  1. Cook spaghetti or linguine according to package instructions; drain and set aside.
  2. In a large skillet over medium heat, heat olive oil. Add diced chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, add minced garlic and cook until fragrant.
  4. Pour in chicken broth and lemon juice, then add butter and stir until melted.
  5. Return the chicken to the skillet and add cooked pasta, tossing to combine.
  6. Season with salt and pepper, and stir in chopped parsley.
  7. Serve hot, garnished with Parmesan cheese.

Notes

Can prepare chicken and sauce in advance; toss with freshly cooked pasta before serving.
