Ingredients

- 2 tablespoons chipotle powder
- 2 limes (juice and zest)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 ripe mango (diced)
- 1/2 red onion (finely chopped)
- 1/4 cup fresh cilantro (chopped)
- 1 jalapeño (finely chopped, optional)
- 1 tablespoon honey (optional)
Instructions
- Mix chipotle powder, lime juice, lime zest, olive oil, salt, and pepper to create a marinade.
- Marinate the chicken breasts for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Grill the chicken for 6-7 minutes on each side, or until cooked through.
- Prepare the mango salsa by mixing diced mango, red onion, cilantro, jalapeño, and honey in a bowl.
- Serve the grilled chicken topped with the mango salsa or use it as a filling for tacos.
