Ingredients

  • 2 tablespoons chipotle powder
  • 2 limes (juice and zest)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 ripe mango (diced)
  • 1/2 red onion (finely chopped)
  • 1/4 cup fresh cilantro (chopped)
  • 1 jalapeño (finely chopped, optional)
  • 1 tablespoon honey (optional)

Instructions

  1. Mix chipotle powder, lime juice, lime zest, olive oil, salt, and pepper to create a marinade.
  2. Marinate the chicken breasts for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Grill the chicken for 6-7 minutes on each side, or until cooked through.
  5. Prepare the mango salsa by mixing diced mango, red onion, cilantro, jalapeño, and honey in a bowl.
  6. Serve the grilled chicken topped with the mango salsa or use it as a filling for tacos.
