Description

Decadent and comforting Chocolatey Brownie Waffles made with almond flour and sweetened with erythritol, perfect for breakfast or dessert.

Ingredients

Scale
  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 2 large eggs
  • 1/4 cup erythritol (or any preferred sweetener)
  • 1/4 cup unsweetened almond milk
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a mixing bowl, combine the almond flour, cocoa powder, baking powder, and salt, giving it a gentle stir to mix well.
  3. In another bowl, whisk together the eggs, sweetener, almond milk, and vanilla extract until the mixture is smooth and creamy.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined — be careful not to overmix!
  5. Spray the waffle iron with non-stick spray, then pour in enough batter to cover the surface (about 1/2 to 3/4 cup depending on your waffle iron).
  6. Close the waffle iron and cook until the waffle is crispy and cooked through, about 3-5 minutes — you’ll know it’s ready when you can smell that chocolatey goodness!
  7. Carefully remove the waffle and repeat with the remaining batter until you have a stack of these delightful treats.
  8. Serve warm with toppings of your choice — consider fresh berries and whipped cream for an extra indulgent touch!

Notes

These waffles can be stored in an airtight container in the refrigerator for up to a week. Reheat in the toaster for a quick breakfast!
