- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon baking powder
- 2 large eggs
- 1/4 cup erythritol (or any preferred sweetener)
- 1/4 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a mixing bowl, combine the almond flour, cocoa powder, baking powder, and salt, giving it a gentle stir to mix well.
- In another bowl, whisk together the eggs, sweetener, almond milk, and vanilla extract until the mixture is smooth and creamy.
- Pour the wet ingredients into the dry ingredients and stir until just combined — be careful not to overmix!
- Spray the waffle iron with non-stick spray, then pour in enough batter to cover the surface (about 1/2 to 3/4 cup depending on your waffle iron).
- Close the waffle iron and cook until the waffle is crispy and cooked through, about 3-5 minutes — you’ll know it’s ready when you can smell that chocolatey goodness!
- Carefully remove the waffle and repeat with the remaining batter until you have a stack of these delightful treats.
