Description

Ingredients

  • 8 ounces pasta (your choice)
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 cucumber, diced
  • 1 cup corn (fresh, frozen, or canned)
  • 1/2 cup fresh cilantro, chopped
  • 1 ripe avocado
  • 1/2 cup Greek yogurt
  • 2 tablespoons lime juice
  • Salt and pepper to taste

Instructions

  1. Begin by cooking the pasta according to the package instructions; once done, drain and let it cool.
  2. In a large bowl, combine the cooled pasta, chickpeas, diced cucumber, corn, and chopped cilantro.
  3. In a separate bowl, mash the avocado until smooth. Then mix it with the Greek yogurt and lime juice until creamy.
  4. Pour the dressing over the pasta salad mixture and gently toss to combine all the flavors.
  5. Season with salt and pepper to taste.
  6. Serve immediately or refrigerate for meal prep throughout the week.
