- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 cup corn (fresh, frozen, or canned)
- 1/2 cup fresh cilantro, chopped
- 1 ripe avocado
- 1/2 cup Greek yogurt
- 2 tablespoons lime juice
- Salt and pepper to taste
Instructions
- Begin by cooking the pasta according to the package instructions; once done, drain and let it cool.
- In a large bowl, combine the cooled pasta, chickpeas, diced cucumber, corn, and chopped cilantro.
- In a separate bowl, mash the avocado until smooth. Then mix it with the Greek yogurt and lime juice until creamy.
- Pour the dressing over the pasta salad mixture and gently toss to combine all the flavors.
- Season with salt and pepper to taste.
