A delightful homemade banana bread sweetened naturally with honey, perfect for breakfast or as a nutritious snack.
Ingredients

- 3 ripe bananas
- 1/2 cup honey
- 1/3 cup melted coconut oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan.
- Mash the ripe bananas with a fork until smooth.
- Stir the melted coconut oil into the mashed bananas.
- Mix in the honey and vanilla extract until well combined.
- Sprinkle the baking soda and salt over the mixture and mix in thoroughly.
- Add the flour and ground cinnamon (if using) and stir until just combined. Be careful not to over-mix!
- Fold in the nuts if desired.
- Pour the batter into the prepared loaf pan, using a spatula to smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Notes
Can be customized with chocolate chips, spices, or citrus zest. Best stored in an airtight container.
