A quick and easy air fryer cheesecake with a crispy graham cracker crust and a creamy filling.

- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup sour cream
- 1 cup graham cracker crumbs
- 1/4 cup butter, melted
- 1 cup strawberry pie filling (or other fruit flavors)
Instructions
- Mix the graham cracker crumbs with melted butter and press into the bottom of a small springform pan.
- Beat the softened cream cheese, granulated sugar, and vanilla extract until smooth.
- Add the sour cream and blend until well combined.
- Pour the cheesecake mixture over the crust and spread evenly.
- Set the air fryer to 320°F (160°C) and cook for 20-25 minutes, until the center is set but slightly jiggly.
- Allow the cheesecake to cool completely, then top with strawberry pie filling before serving.

Make-ahead advice: This cheesecake can be made a day in advance. Store covered in the refrigerator.
