Ingredients

- 1 pound beef stew meat, cut into cubes
- 1 cup barley
- 4 cups beef broth
- 2 cups water
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Heat a drizzle of olive oil in a large pot over medium heat.
- Add the chopped onion, carrots, and celery. Sauté until softened.
- Stir in the minced garlic and cook for an additional minute.
- Toss in the beef stew meat and let it brown on all sides.
- Pour in the beef broth and water, then stir in the barley and dried thyme.
- Bring to a boil, then reduce heat and let it simmer for about 60 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with thyme or fresh parsley if desired.
