Description

These Cozy Cranberry Bliss Bars blend tart cranberries with creamy white chocolate and orange zest, topped with a luscious cream cheese frosting. Perfect for fall gatherings.


Ingredients

  • 1 teaspoon baking powder
  • ½ teaspoon table salt
  • 12 tablespoons unsalted butter
  • 1½ cups packed light brown sugar
  • 2 large eggs (lightly beaten)
  • 2 teaspoons vanilla extract
  • 1 teaspoon finely grated orange zest
  • ¾ cup dried cranberries
  • 1â…“ cups white chocolate (chopped or white chocolate chips)
  • 1â…” cups white chocolate (melted)
  • 8 oz cream cheese (softened)
  • 1½ cups confectioners’ sugar (sifted)
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange juice
  • 1 teaspoon finely grated orange zest
  • ½ cup dried cranberries (roughly chopped)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish or line it with parchment paper to prevent sticking.
  2. Whisk together the flour, baking powder, and salt to form the dry base.
  3. Melt the unsalted butter and stir in the brown sugar until well combined.
  4. Add the lightly beaten eggs, vanilla extract, and orange zest to the butter mixture, mixing until smooth.
  5. Incorporate the dry ingredients into the wet mixture, folding in the dried cranberries and white chocolate.
  6. Spread the batter in the prepared baking dish and bake for 25-30 minutes or until a toothpick inserted comes out clean.
  7. Allow your baked bars to cool completely in the dish.
  8. Beat the softened cream cheese until smooth, then gradually add the confectioners’ sugar, vanilla, orange juice, and zest until fluffy.
  9. Spread the cream cheese frosting over the cooled bars and refrigerate for at least 30 minutes.
  10. Sprinkle roughly chopped dried cranberries over the frosting and drizzle with melted white chocolate.

Notes

These bars can be made a day in advance. Store leftovers in an airtight container in the refrigerator for up to one week.
