Description

Ingredients

  • 14 tablespoons unsalted butter
  • 1 tablespoon ground espresso
  • 1/2 cup + 2 tablespoons light brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract
  • 1 2/3 cup + 1 tablespoon all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup chopped semi-sweet chocolate or mini chocolate chips

Instructions

  1. Cook the butter in a stainless steel pan over medium heat until it turns amber brown.
  2. Scrape all of the butter into your mixing bowl.
  3. Stir in the ground espresso and let the bowl cool to room temperature.
  4. Whisk the brown sugar and granulated sugar together for one minute.
  5. Add the egg, egg yolk, and vanilla extract, then whisk until combined.
  6. Fold in the flour, baking soda, salt, and chopped chocolate until just combined.
  7. Scoop the dough onto a parchment-lined tray and chill in the freezer for at least 3-4 hours.
  8. Preheat the oven to 350°F (180°C).
  9. Bake the cookies for 10-12 minutes until the edges are golden.
  10. Cool on a wire rack and enjoy!

Notes

For best flavor and texture, chill the dough overnight. You can customize with nuts, dried fruits, or spices.
