Description

A warm and comforting Easy Fried Rice recipe perfect for busy weeknights and using up leftovers.


Ingredients

  • 2 eggs
  • 3 cups leftover rice
  • 23 tablespoons soy sauce
  • 1 cup mixed vegetables (fresh or frozen)
  • 2 green onions, chopped
  • 2 tablespoons cooking oil

Instructions

  1. Heat the oil in a skillet over medium heat until it’s glistening.
  2. Crack the eggs into the skillet and scramble until fully cooked; remove and set aside.
  3. In the same skillet, stir-fry the leftover rice until heated through, allowing it to catch some color.
  4. Pour in the soy sauce, then add the mixed vegetables and scrambled eggs back in.
  5. Stir everything together and cook for an additional 2-3 minutes until well combined.
  6. Garnish with chopped green onions before serving.

Notes

Use leftover rice for best results. Customize with any veggies or proteins you have on hand.
