- 2 sausages (Italian or your choice), casings removed

- Fresh sage, to taste
- Salt and pepper, to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent.
- Add the sausage to the skillet, breaking it apart with a spoon. Cook until browned.
- Stir in the diced butternut squash and cook until it begins to soften.
- Add garlic, thyme, and sage, cooking for another minute until fragrant.
- Pour in the heavy cream and bring to a gentle simmer, allowing the sauce to thicken slightly.
- Add the gnocchi directly into the skillet, stirring to combine, ensuring the gnocchi is coated in the luscious sauce.
- Cook for an additional 2-3 minutes until the gnocchi is heated through.
- Stir in the Parmesan cheese, and season with salt and pepper to taste.
- Serve hot, garnished with additional herbs if desired.
