Description

A comforting and creamy gnocchi dish featuring savory sausage, fragrant herbs, and seasonal butternut squash, perfect for chilly evenings.


Ingredients

  • 1 package of gnocchi
  • 1 butternut squash, peeled and diced
  • 2 sausages (Italian or your choice), casings removed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh thyme, to taste
  • Fresh sage, to taste
  • Salt and pepper, to taste
  • Olive oil for cooking

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the sausage to the skillet, breaking it apart with a spoon. Cook until browned.
  3. Stir in the diced butternut squash and cook until it begins to soften.
  4. Add garlic, thyme, and sage, cooking for another minute until fragrant.
  5. Pour in the heavy cream and bring to a gentle simmer, allowing the sauce to thicken slightly.
  6. Add the gnocchi directly into the skillet, stirring to combine, ensuring the gnocchi is coated in the luscious sauce.
  7. Cook for an additional 2-3 minutes until the gnocchi is heated through.
  8. Stir in the Parmesan cheese, and season with salt and pepper to taste.
  9. Serve hot, garnished with additional herbs if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet with a splash of cream or broth.
