- 8 oz fettuccine pasta
- 2 tablespoons olive oil
- 1 pound chicken breast, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the fettuccine according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced chicken and cook until browned and cooked through, about 6-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and bring to a simmer. Reduce the heat to low and stir in the grated Parmesan cheese until melted and smooth.
- Season with salt and pepper to taste.
- Add the cooked fettuccine and chicken back to the skillet, tossing to coat in the sauce.
- Serve immediately, garnished with fresh parsley.
Notes
Make ahead by prepping chicken and sauce in advance. Store leftovers in an airtight container for up to 3 days.
