Description

A comforting and indulgent dish featuring tender salmon, vibrant spinach, and a creamy sauce, perfect for a cozy dinner.


Ingredients

Scale
  • 4 salmon fillets
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes
  • 1/2 cup heavy cream
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Parmesan cheese for garnish (optional)

Instructions

  1. Melt butter in a large skillet over medium heat. Add minced garlic and sauté until fragrant.
  2. Add sun-dried tomatoes and cook for 2 minutes until softened.
  3. Push tomatoes to the side and add salmon fillets. Cook for 4-5 minutes per side until golden brown.
  4. Remove salmon from skillet and set aside to rest.
  5. Add heavy cream to the same skillet and bring to a gentle simmer.
  6. Stir in spinach until wilted.
  7. Return salmon to the skillet, coating in the sauce.
  8. Season with salt and pepper, and top with Parmesan cheese if desired.

Notes

Make-ahead sauce and store leftovers in an airtight container for up to 3 days. Use fresh spinach for the best flavor.
