- 4 salmon fillets
- 2 cups fresh spinach
- 1/2 cup sun-dried tomatoes
- 1/2 cup heavy cream
- 3 cloves garlic, minced
- 2 tablespoons butter
- Salt and pepper to taste
- Parmesan cheese for garnish (optional)
Instructions
- Melt butter in a large skillet over medium heat. Add minced garlic and sauté until fragrant.
- Add sun-dried tomatoes and cook for 2 minutes until softened.
- Push tomatoes to the side and add salmon fillets. Cook for 4-5 minutes per side until golden brown.
- Remove salmon from skillet and set aside to rest.
- Add heavy cream to the same skillet and bring to a gentle simmer.
- Stir in spinach until wilted.
- Return salmon to the skillet, coating in the sauce.
- Season with salt and pepper, and top with Parmesan cheese if desired.
Notes
