- 1 cup rice, uncooked
- 2 cups chicken broth
- 1 can black beans, drained
- 1 cup corn
- 1 cup salsa
- 1 cup shredded cheese
- 1 teaspoon taco seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- Combine the cooked chicken, uncooked rice, chicken broth, black beans, corn, salsa, taco seasoning, salt, and pepper in a large baking dish.
- Mix everything together, spreading evenly across the dish for thorough cooking.
- Cover with foil and bake for 40 minutes, allowing all the flavors to meld together.
- Remove the foil and sprinkle shredded cheese on top.
- Bake for an additional 10-15 minutes, until the cheese is beautifully melted and bubbly.
- Let cool for a few minutes before diving in!
