Description

A comforting casserole filled with tender chicken, zesty salsa, and cheesy goodness, perfect for busy weeknights.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup rice, uncooked
  • 2 cups chicken broth
  • 1 can black beans, drained
  • 1 cup corn
  • 1 cup salsa
  • 1 cup shredded cheese
  • 1 teaspoon taco seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cooked chicken, uncooked rice, chicken broth, black beans, corn, salsa, taco seasoning, salt, and pepper in a large baking dish.
  3. Mix everything together, spreading evenly across the dish for thorough cooking.
  4. Cover with foil and bake for 40 minutes, allowing all the flavors to meld together.
  5. Remove the foil and sprinkle shredded cheese on top.
  6. Bake for an additional 10-15 minutes, until the cheese is beautifully melted and bubbly.
  7. Let cool for a few minutes before diving in!
