Description

Ingredients

  • 1 pound chicken breast, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 bell pepper, sliced (any color)
  • 2 green onions, chopped
  • 1 tablespoon black pepper
  • Salt to taste
  • Cooked rice for serving

Instructions

  1. Marinate the chicken pieces with soy sauce and cornstarch for 15 minutes.
  2. Heat the oil in a pan over medium-high heat.
  3. Add the marinated chicken and stir-fry until golden brown.
  4. Toss in the garlic, ginger, bell pepper, green onions, and black pepper.
  5. Stir-fry for another 3-4 minutes until the vegetables are tender.
  6. Season with salt as needed.
  7. Serve hot over cooked rice.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. You can marinate the chicken the night before for extra flavor.
