Description

A vibrant and flavorful pasta salad perfect for summer gatherings, family picnics, or quick weeknight dinners.


Ingredients

  • 8 ounces of rotini pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/2 cup red onion, diced
  • 1/2 cup black olives, sliced
  • 1 cup mozzarella cheese, cubed
  • 1/2 cup Italian dressing
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the rotini pasta according to package instructions. Drain and let cool.
  2. Combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, and mozzarella cheese in a large bowl.
  3. Pour the Italian dressing over the salad and mix until everything is well coated.
  4. Season with salt and pepper to taste.
  5. Refrigerate for at least 30 minutes before serving to let the flavors meld together.
  6. Garnish with fresh basil before serving for a pop of color and fresh flavor.

Notes
