- 8 ounces of rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red bell pepper, diced
- 1/2 cup red onion, diced
- 1/2 cup black olives, sliced
- 1 cup mozzarella cheese, cubed
- 1/2 cup Italian dressing
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the rotini pasta according to package instructions. Drain and let cool.
- Combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, black olives, and mozzarella cheese in a large bowl.
- Pour the Italian dressing over the salad and mix until everything is well coated.
- Season with salt and pepper to taste.
- Refrigerate for at least 30 minutes before serving to let the flavors meld together.
- Garnish with fresh basil before serving for a pop of color and fresh flavor.
