- 2 cans white beans, drained and rinsed
- 1 tablespoon tahini
- 1 lemon, juiced
- 4 cups vegetable broth
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat a little olive oil over medium heat.
- Add the diced onion, carrots, and celery, sautéing until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the drained white beans, vegetable broth, tahini, lemon juice, thyme, rosemary, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
- Use an immersion blender to blend the soup to your desired consistency.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh herbs if desired.
