Description

A warm and comforting Easy White Bean Soup that’s quick to make, nutritious, and customizable for any family dinner.


Ingredients

  • 2 cans white beans, drained and rinsed
  • 1 tablespoon tahini
  • 1 lemon, juiced
  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat a little olive oil over medium heat.
  2. Add the diced onion, carrots, and celery, sautéing until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the drained white beans, vegetable broth, tahini, lemon juice, thyme, rosemary, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
  6. Use an immersion blender to blend the soup to your desired consistency.
  7. Taste and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh herbs if desired.
