Description

A nourishing cabbage soup that’s low in calories and high in nutrients, perfect for healthy weeknight dinners.


Ingredients

Scale
  • 1 head of cabbage, chopped
  • 1 large onion, diced
  • 2 carrots, sliced
  • 3 celery stalks, chopped
  • 2 bell peppers, diced
  • 1 can of diced tomatoes
  • 6 cups of vegetable broth
  • 2 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of Italian seasoning
  • Fresh herbs (optional, for garnish)

Instructions

  1. Heat a splash of vegetable broth in a large pot over medium heat and sauté the diced onion and minced garlic until translucent.
  2. Add the chopped carrots, celery, and diced bell peppers. Cook for about 5 minutes.
  3. Stir in the chopped cabbage and continue to cook until it starts to wilt.
  4. Pour in the can of diced tomatoes and 6 cups of vegetable broth. Season with salt, black pepper, and Italian seasoning.
  5. Bring the soup to a boil, then reduce the heat and let it simmer gently for 30-40 minutes.
  6. Serve hot, garnishing each bowl with fresh herbs if desired.

Notes

Make a big batch and refrigerate it for up to 4 days. Customize with any seasonal vegetables you have!
