A nourishing cabbage soup that’s low in calories and high in nutrients, perfect for healthy weeknight dinners.
Ingredients

- 1 head of cabbage, chopped
- 1 large onion, diced
- 2 carrots, sliced
- 3 celery stalks, chopped
- 2 bell peppers, diced
- 1 can of diced tomatoes
- 6 cups of vegetable broth
- 2 cloves of garlic, minced
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1 teaspoon of Italian seasoning
- Fresh herbs (optional, for garnish)
Instructions
- Heat a splash of vegetable broth in a large pot over medium heat and sauté the diced onion and minced garlic until translucent.
- Add the chopped carrots, celery, and diced bell peppers. Cook for about 5 minutes.
- Stir in the chopped cabbage and continue to cook until it starts to wilt.
- Pour in the can of diced tomatoes and 6 cups of vegetable broth. Season with salt, black pepper, and Italian seasoning.
- Bring the soup to a boil, then reduce the heat and let it simmer gently for 30-40 minutes.
- Serve hot, garnishing each bowl with fresh herbs if desired.
Notes
Make a big batch and refrigerate it for up to 4 days. Customize with any seasonal vegetables you have!
