- 1 cup orzo pasta
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 cup mushrooms, sliced
- 2 cups fresh spinach
- Salt and pepper to taste
- Parmesan cheese, for serving
Instructions
- Cook the orzo pasta according to package instructions. Drain and set aside.
- Melt the butter in a large skillet over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the sliced mushrooms to the skillet and cook until they are softened and golden, about 5-7 minutes.
- Stir in the fresh spinach and cook until wilted.
- Add the cooked orzo to the skillet, and toss everything together. Season with salt and pepper to taste.
- Serve warm, topped with grated Parmesan cheese.
