Ingredients

- 1 whole chicken
- 1/2 cup unsalted butter, softened
- 4 cloves garlic, minced
- 2 tablespoons fresh herbs (such as rosemary, thyme, and parsley), chopped
- 1 lemon, zested and juiced
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the softened butter, minced garlic, chopped herbs, lemon zest, and lemon juice until well combined.
- Pat the chicken dry and season it generously with salt and pepper both inside and out.
- Loosen the skin of the chicken and spread the herb butter mixture underneath.
- Rub any remaining butter on the surface of the chicken.
- Place the seasoned chicken in a roasting pan and roast for about 60 minutes.
- Let it rest for 10 minutes before carving and serving.
Notes
For best results, prepare the herb butter mixture a day in advance. Feel free to experiment with different herbs and citrus.
