Description

A delightful roast chicken infused with garlic and fresh herbs, perfect for family gatherings and weeknight dinners.


Ingredients

Scale
  • 1 whole chicken
  • 1/2 cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tablespoons fresh herbs (such as rosemary, thyme, and parsley), chopped
  • 1 lemon, zested and juiced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the softened butter, minced garlic, chopped herbs, lemon zest, and lemon juice until well combined.
  3. Pat the chicken dry and season it generously with salt and pepper both inside and out.
  4. Loosen the skin of the chicken and spread the herb butter mixture underneath.
  5. Rub any remaining butter on the surface of the chicken.
  6. Place the seasoned chicken in a roasting pan and roast for about 60 minutes.
  7. Let it rest for 10 minutes before carving and serving.

Notes

For best results, prepare the herb butter mixture a day in advance. Feel free to experiment with different herbs and citrus.
