Description

A comforting meal of chicken and potatoes cooked in a rich garlic Parmesan sauce, perfect for chilly evenings.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 4 medium potatoes, diced
  • 2 tablespoons olive oil

Instructions

  1. Mix together the grated Parmesan cheese, minced garlic, dried basil, dried thyme, salt, and black pepper in a bowl.
  2. Rub the mixture generously over the chicken breasts.
  3. Heat the olive oil over medium heat and sear the chicken breasts for 2-3 minutes on each side.
  4. Place the diced potatoes in the crockpot and lay the seared chicken breasts on top.
  5. Pour the chicken broth over everything.
  6. Cover and cook on low for 360-480 minutes or until the chicken is cooked through and tender.
  7. Serve the chicken and potatoes warm, drizzled with the sauce from the crockpot.

For added flavor, try including seasonal vegetables or swapping in sweet potatoes.
