- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 teaspoon dried basil
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup chicken broth
- 4 medium potatoes, diced
- 2 tablespoons olive oil
Instructions
- Mix together the grated Parmesan cheese, minced garlic, dried basil, dried thyme, salt, and black pepper in a bowl.
- Rub the mixture generously over the chicken breasts.
- Heat the olive oil over medium heat and sear the chicken breasts for 2-3 minutes on each side.
- Place the diced potatoes in the crockpot and lay the seared chicken breasts on top.
- Pour the chicken broth over everything.
- Cover and cook on low for 360-480 minutes or until the chicken is cooked through and tender.
- Serve the chicken and potatoes warm, drizzled with the sauce from the crockpot.
