Ingredients

- 8 oz pasta of choice
- 1 cup fresh basil leaves
- 1/2 cup fresh parsley leaves
- 1/4 cup pine nuts
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic
- 1/2 cup olive oil
- Salt and pepper to taste
- Cherry tomatoes (optional, for garnish)
- Grilled chicken or tofu (optional, for protein)
Instructions
- Cook the pasta according to package instructions; drain and set aside.
- In a food processor, combine basil, parsley, pine nuts, Parmesan cheese, and garlic. Pulse until finely chopped.
- With the processor running, slowly add in olive oil until well blended and smooth. Season with salt and pepper.
- Toss the cooked pasta with the pesto until evenly coated. If desired, add sliced cherry tomatoes and your choice of protein.
- Serve warm or at room temperature.
Notes
Pesto can be made a day in advance for deeper flavor. Serve with a splash of olive oil to refresh leftovers.
