Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 6 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1 avocado, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup balsamic vinaigrette

Instructions

  1. Preheat your grill to medium-high heat, letting it get nice and hot.
  2. Rub the chicken breasts with olive oil, and season generously with salt and pepper for that full flavor.
  3. Grill the chicken for about 6-7 minutes on each side, or until cooked through and you see those lovely grill marks.
  4. Once done, let the chicken rest for a few minutes before slicing it into tender pieces.
  5. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, red onion, avocado, and feta cheese, creating a colorful mix.
  6. Top the salad with the sliced grilled chicken, making sure every bite gets the perfect amount.
  7. Drizzle on the balsamic vinaigrette, toss gently, and serve immediately with a smile!
