Ingredients

  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil

  • 4 whole wheat tortillas
  • 1 cup hummus
  • 1/4 cup fresh herbs (parsley, basil, or cilantro), chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the grill to medium-high heat.
  2. Toss together the sliced zucchini, bell pepper, red onion, and halved cherry tomatoes in a large mixing bowl. Add the olive oil, salt, and pepper, making sure every piece is coated.
  3. Grill the vegetables for about 5-7 minutes, turning occasionally, until they become tender and slightly charred.
  4. Combine the chopped herbs with lemon juice and garlic powder in a small bowl to create a refreshing herb sauce.
